Smithfield country hams are aged, smoked and dry salt-cured the same as the Genuine Smithfield Ham, but for a shorter time. The result is a more subtle, slightly milder flavor that still retains that distinctive country-cure taste. The shorter shanked Smithfield Country Ham is often referred to as a second cousin to a Genuine Smithfield Ham. Slice paper thin for maximum flavor. Uncooked half, 5 - 7 lbs.
PLEASE NOTE these hams have been dry cured with SALT and must be sliced thin to enjoy the full country flavor.
Use a stiff brush to remove surface mold if present. This mold is in no way injurious. Aged hams, like aged cheeses, mold in the process.
