Aged, smoked, and dry cured by the same process first used by the Indians and Colonial Virginia settlers. These moist, succulent hams although still considerably milder than a Smithfield ham, still retain that distinctive old-fashioned country cure flavor. A shorter curing process results in this more subtle, milder flavor. The most popular of our curemaster's delights are Smithfield's award winning, mild flavored country hams.
Dry cured and then slowly smoked for ten days with the same care as the Smithfield Ham, less aging gives this milder ham a less salty taste. A milder flavor, short cut, hickory smoked ham that should be sliced very thin. Like the Genuine Smithfield Ham, this too is dry salt-cured, but with less salt content because the curing process is shortened and aged to a minimum of three to six months.
PLEASE NOTE these hams have been dry cured with SALT and must be sliced thin to enjoy the full country flavor.
