These uncooked, long shanked picnics are aged, smoked and dry cured with extra salt and athen hand-rubbed with ground black pepper. Dry cured with extra salt to accommodate the preservation methods of hotter climates. 5-7 lbs.
Use a stiff brush to remove surface mold if present. This mold is in no way injurious. Aged hams, like aged cheeses, mold in the process.
